Menu Plan Monday~June 17, 2013

 
Welcome to Menu Plan Monday hosted by Laura at Orgjunkie.com!  Hope you all had a great week!
We went to camp for the first time this year.  We had a nice time, ate some good food, and enjoyed some time on the boat, too.  We tried the new marshmallows made for s'mores.  They were almost too big.  lol  Perfect fit for a graham cracker square, but harder to roast over the fire for some reason. We decided we'll cut them in half next time.
 
On Father's Day, we rose early to pack up camp and head home for lunch with my family, to honor my Dad.  My mom made the traditional Italian Sunday Dinner...homemade sauce, spaghetti, meatballs, sausage, hard boiled eggs, homemade bread and salad.  We had a nice time.  Then visited J's Dad in the evening and watched a few classic movies with him.

I haven't done a Menu Plan Monday in months.  I'm still actively menu planning, but just don't seem to find the time to post my menus.  I hope to do better in the coming year.  Today finds me home with a sick teenager, so I'm trying to accomplish little things I don't usually get to when I'm teaching each day of the week and running to church, school, dance, and hockey games.

Sunday Brunch

I hosted a brunch today for my parents' 41st Anniversary. In the photo above they just opened the gift of a new roaster from us. At Christmas my dad was going on about how they needed a new roaster while doing the dishes, since their 30+ year old one was chipped, so I thought it would be the perfect gift. ;0)

I did a love theme, using hearts and snowflakes. The menu included French Toast Casserole, Egg and Sausage Casserole, Apple Cinnamon Muffins(ww) and Fruit Salad. I had coffee, tea, and juices for beverages as well.



I also decorated the house this weekend for Valentines' Day. I found this printable via Pinterest. I mounted it on red paper and framed it for the buffet area. Of course, I forgot to take pictures of the food!

General Tso's Chicken

Yesterday was my first attempt at home cooked Chinese. I made General Tso's Chicken since the entire family will eat it. It's my favorite Chinese dish. Here's the recipe that I found at Tasty Kitchen. There are step-by-step photos here. The only thing I changed was that I substituted dried ginger for the ginger root. I used 1/4 tsp. for the 2 Tbsp. of grated ginger.



General Tso's Chicken



FOR THE CHICKEN:
1-½ teaspoon Toasted Sesame Oil
1 Tablespoon Soy Sauce
1 whole Large Egg White
¼ cups Plus 2 Tablespoons Cornstarch
1 pound Boneless, Skinless Chicken Thighs
Canola, Peanut, Or Vegetable Oil For Frying
FOR THE SAUCE:
1 Tablespoon Peanut, Canola Or Vegetable Oil
2 cloves Garlic, Peeled And Minced
2 Tablespoons Finely Chopped Fresh Ginger Root
1 cup Chicken Broth Or Stock
¼ cups Soy Sauce
1 Tablespoon Cornstarch
1 teaspoon Chinese Chile-garlic Sauce
3 Tablespoons Raw (turbinado Or Demerara) Sugar
FOR SERVING:
4 whole Scallions, Thinly Sliced
Steamed Rice
Steamed Broccoli




your chicken:In a mixing bowl, stir together the sesame oil, soy sauce, egg white, and 1/4 cup plus 2 tablespoons of cornstarch until a thick slurry forms. It will look gummy but smooth.
Add the chicken pieces and stir until all are evenly coated. At first it may appear that it will not come together but it does!Set chicken aside, covered lightly with plastic wrap, at room temperature for 20 minutes, stirring occasionally.
Begin the sauce:Add the tablespoon of oil to a large, heavy-bottomed saucepan over high heat. Stir the garlic and ginger into the oil and cook, stirring constantly, until fragrant, about 1 minute.
In a separate bowl, whisk together the remaining sauce ingredients until smooth. Pour into the garlic and ginger, stirring, until the sauce becomes thick and shiny. Once the sauce thickens, lower heat and keep the saucepan over a low burner partially covered to stay warm.
To fry the chicken:Heat 1/2-inches of oil in a heavy-bottomed, high-sided frying pan or skillet over high heat.
When the oil is shimmering, add one piece of chicken at a time, taking care not to crowd the pan. Cook chicken for 4 minutes on each side, or until deep golden brown and crisp on both sides**.
Transfer the fried chicken to a paper towel lined plate and repeat the process until you’ve cooked all the chicken.
Then slide all of the fried chicken into the prepared sauce and toss to coat. (If desired, add some steamed broccoli to coat with the sauce also.) Increase the heat to medium, stir and cook just until hot all the way through.
Sprinkle with sliced scallions and serve immediately over white rice.

This week is another busy one, but I'm planning on eating at home as much as possible. I'm also using lower fat and sodium ingredients to help with weight control and hypertension. Here's our plan:

Menu Plan Monday 9.6.10


Welcome to another Menu Plan Monday, hosted by Laura at I'm An Organizing Junkie. Happy Labor Day to my USA readers. This week will be another busy one, with hopes of moving in our near future. We started painting and the upstairs will be ready for paint tomorrow. Once the contractor primes the rooms, then we can paint upstairs too.

Menu Plan Monday 8.9.10


Welcome to another Menu Plan Monday hosted by Laura at I'm An Organizing Junkie. We did a very poor job of following a menu last week. Our foundation was finally installed, so we had spent the day there watching it. We went to dh's work picnic on Friday night, so I didn't cook then either. Life is happening and the cooking is falling to the wayside. I must admit that cooking in a tiny apartment kitchen, with a tiny apartment size stove, just isn't as enjoyable for me. The stove doesn't cook correctly and things burn (despite constant checking!) in seconds. This too shall pass, soon! Here's the plan for this week:

Menu Plan Monday 6.21.10


Welcome to another Menu Plan Monday, hosted by Laura at I'm An Organizing Junkie. Last week we tried several new dishes. The Weeknight Taco Salads were a hit with the kids. The Sausage and Chicken Kabobs were good, but I would recommend using low sodium soy sauce (which was hidden in my cupboard and I found it after making the marinade!) and leave out the season salt too. We also enjoyed the Zucchini Boats. All the recipes will make another appearance on our menu plans. Here's this week's plan with a few "new" recipes:
