Our Weekend Away

Over the weekend we went to camp. I feel so blessed each time that we go there. We are blessed to be able to have the site, the camp and the time to spend together as a family. On Friday night, we stopped at Best Way for dinner on the way to camp. Once we arrived, we unpacked set up and had smores over the fire. On Saturday, we headed out on for a boat ride. We decided to go to a different launch (with a shorter no wake zone in case of rain) and got caught in a state police saturation stop. Unfortunately the boat trailer was not inspected (and now is!) and we have to pay a fine. Eventually we made it to the launch, where the boat battery was dead. Thanks to dh's think ahead attitude, he had the jumper box with him and we were on our way. The clouds cleared out and the sun shined for our entire time on the lake. We ate a yummy lunch of sandwich wraps, fresh pineapple and cantaloupe, and chips. There was fishing, swimming, and lots of splashing going on. Upon our return to camp, we had dinner, showered and then sat around the fire for a bit until the wind and rain started. We played I'm going camping and I'm taking....for one round. Then the kids went to bed. DH and I chatted on the deck until about 11, when we turned in.

On Sunday, we enjoyed some time together playing games all afternoon.

It was a really nice weekend together.

I actually stuck to the menu for last week. I was quite proud of myself. I wish I had this much energy during the school year to cook nightly and not get take-out or order in at least twice a week. I know the family appreciates it too.

Friday~Happy Fourth of July! Cheeseburgers, Homemade French Fries, Fresh Fruit, Chocolate Frosted Brownies, and Veggies with Dip

Saturday~Beef and Vegetable Kabob Dinner

Menu Plan Monday, June 23, 2008


Good morning! I'm looking forward to my first week of summer vacation. Last week was very busy with the SPWP Young Writers program. We had a great week writing and exploring some of the history of our town. On Thursday, ds started his summer hockey skills and drills. We spent some time getting things together for dh's parent's 40th wedding Anniversary picnic. I made French Toast Casserole for her brunch guests and the cake topper for the cake from the bakery. As our gift to them, I took photos of the day and am scrapbooking them into a memory book.

As for last week's menu, we didn't have the meatloaf. We did go out to eat on Saturday night with the kids. We then had an at home date night when the kids went to bed.

Monday~Mrs. Dash Sizzling Cheeseburgers, Macaroni and Cheese, Corn on the Cob

Tuesday~Crockpot Rotisserie Chicken, Baked Potato Salad, Creamy Cucumbers

Wednesday~Slow Cooker Spaghetti Sauce over Spaghetti, Veal Parmesan and Tossed Salad

Thursday~Chicken Tacos (using leftover chicken from Tuesday), Mexican Rice and Mexicorn

Friday~ Pizza and Wing Night

Saturday~Grilled Pork Chops, Rice Pilaf, Fresh Fruit Salad

It's been a few weeks since I've posted our menus. We've been so busy the last few weekends that I haven't had an opportunity to post on Mondays. The school year is finally over and summer vacation has begun! WooHoo! I'm looking forward to cooking this summer and trying some new recipes.

First Day of Vacation

DD got a new pool from her Aunt and Uncle for her birthday. Today was the first time we used it and it was the first day of Summer vacation. We were outside for almost 3 hours playing, laughing and staying cool on this 90 degree day. The kids had a great time.

Improving Our Campsite

We've been slowly working on improving our camp site. Last weekend dh pulled out some ivy that the previous site owners put in, along with tons of landscape rock and replaced it with hostas. Next weekend we'll add some mulch to the area. We are also planning on expanding the fire pit area, too.
