Menu Plan Monday~June 17, 2013

Welcome to Menu Plan Monday hosted by Laura at Orgjunkie.com!  Hope you all had a great week!
We went to camp for the first time this year.  We had a nice time, ate some good food, and enjoyed some time on the boat, too.  We tried the new marshmallows made for s'mores.  They were almost too big.  lol  Perfect fit for a graham cracker square, but harder to roast over the fire for some reason. We decided we'll cut them in half next time.

On Father's Day, we rose early to pack up camp and head home for lunch with my family, to honor my Dad.  My mom made the traditional Italian Sunday Dinner...homemade sauce, spaghetti, meatballs, sausage, hard boiled eggs, homemade bread and salad.  We had a nice time.  Then visited J's Dad in the evening and watched a few classic movies with him.

Here's our plan for this week:

Sunday~Dinner at Mom's

Monday~Slow Cooker Cube Steaks in Gravy, Mashed Potatoes, Green Beans

Tuesday~Grilled Ham Steaks, Pierogies, Roasted Cabbage

Thursday~Chicken and Steak Fajitas, Salsa Rice, Grilled Veggie

Friday~Pizza and Wings....eat out or take out!

Saturday~Camping or Motorcycle Rally Food

Have a great week!

Menu Plan Monday 8.23.10

Welcome to another Menu Plan Monday, hosted by Laura at I'm An Organizing Junkie. A new school year begins tomorrow for me, so this week's menu will be simple and easy for me. These first few weeks back in school are exhausting for us all, along with painting, drywalling, insulating, packing and moving over the next few weeks, it will be extra exhausting this year. I just can't wait to be settled. I'm hoping for that to happen by November....I may have everything unpacked by then. ;0) Here's the plan for this week:

Sunday~Slow Cooker Rotisserie Chicken, Creamy Italian Pasta Salad, Garlic Toast

Monday~Bacon Cheese Hot Dogs, Homemade Fries, Corn on the Cob

Tuesday~Chicken Fajitas, Salsa Rice, Salad

Wednesday~Take Out~Kindergarten Orientation

Thursday~Beef Patties in Gravy, Mashed Potatoes and Gravy, Green Beans

Friday~Pizza and Wing Night

Saturday~Grilled Chicken, Pasta with Olive Oil and Garlic, Salad

Have a week full of blessings,

Lisa

Menu Plan Monday 8.9.10

Welcome to another Menu Plan Monday hosted by Laura at I'm An Organizing Junkie. We did a very poor job of following a menu last week. Our foundation was finally installed, so we had spent the day there watching it. We went to dh's work picnic on Friday night, so I didn't cook then either. Life is happening and the cooking is falling to the wayside. I must admit that cooking in a tiny apartment kitchen, with a tiny apartment size stove, just isn't as enjoyable for me. The stove doesn't cook correctly and things burn (despite constant checking!) in seconds. This too shall pass, soon! Here's the plan for this week:

Sunday~Dinner at mom's.....Homemade Spaghetti Sauce over spaghetti, homemade meatballs, hot sausage, salad from the garden and cheesy garlic bread.

Monday~Slow Cooker Ham, Parsleyed Potatoes and Green Beans

Tuesday~Sloppy Joes with Macaroni and Cheese

Wednesday~ House Setting Day! Chicken Fajitas with Salsa Rice

Thursday~BLT's with Chips and Fresh Fruit

Friday~Baked Cheesy Chicken Penne with Salad with ingredients from the garden

Saturday~Family Reunion

Thank you for stopping by! Have a great week!

Blessings,

Lisa

Menu Plan Monday 6.28.10

Welcome to another Menu Plan Monday hosted by Laura at I'm An Organizing Junkie. This week's menu will be filled with a few new menu items, since I didn't get to some of them last week. I'm trying to make easy dinners on these hot days because it is too hot in the kitchen and too hot to eat a heavy meal most days.

Sunday~Dinner at the church festival

Monday~ Manicotti with Slow Cooker Spaghetti Sauce, Salad

Tuesday~Buffalo Chicken, Garlic Mashed Potatoes, Green Beans

Wednesday~Steak and Chicken Fajitas, Salsa Rice, Salad

Thursday~Sloppy Joes, Macaroni and Cheese, Corn

Friday~Pizza

Saturday~Grilled Pork Chops, Pasta Salad, Fresh Fruit

Have a week full of blessings!

Peace,

Lisa

Chicken Fajitas and Salsa Rice

Hola! It's Mexican night at our house. I'm going to share with you my favorite fajita recipe and the recipe for salsa rice, along with some photos. I envy those bloggers who always have a photo story to go with their recipes~so I thought I'd give it a try! It was quite an effort, but here is what I have:

Chicken Fajitas

The ingredients: cumin, salt, pepper, dry oregano, lime juice (fresh is the best) and olive oil.

Combine the ingredients in a ziploc bag. I put mine inside a bowl to give the bag some support. Then add four boneless, skinless chicken breasts.

Marinate the chicken breasts for 30 minutes on the counter or for up to 8 hours in the refrigerator. I always do it for at least an hour in the refrigerator.

About 30 minutes before grilling chicken, in a deep skillet, heat olive oil over medium-high heat. Add the onions and cook for about 3 minutes, until softened, stirring often. Add the bell pepper and stir fry for 2 minutes. Reduce the heat to medium-low, sprinkle with 1/2 teaspoon of salt, cover and cook for 4 to 5 minutes, stirring once, until the peppers are crisp tender.

Here is our plate filled with the grilled chicken, which has been sliced cross-wise into strips, peppers and onions. I serve fajitas on tortillas with sour cream, cheese, and lettuce as toppings.

As a side, I made Salsa Rice. You can find the recipe here. It is so easy and so good too! I used Chi Chi's Fiesta Salsa in Medium.

Here's the recipe for the Fajitas:

Marinade~

3 Tablespoons fresh lime juice

2 Tablespoons olive oil

1 teaspoon minced fresh garlic

1/2 teaspoon ground cumin

1/2 teaspoon dried oregano leaves, crumbled

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Fajitas~

4 boneless, skinless chicken breasts

1 small onion

1 large green bell pepper

2 Tablespoons olive oil

1/2 teaspoon salt

8 flour tortillas, stacked and wrapped in foil

Toppings~cheese, guacamole, lettuce, sour cream

Make the marinade: In a zipper-type food storage bag, mix the lime juice, oil, garlic, cuming, oregano, salt and pepper. Add the chicken, seal the bag and turn until chicken is coated. Let marinate for 30 minutes at room temperature or for up to 8 hours in the refrigerator.

Meanwhile, slice a small onion and cut one large bell pepper into thin strips. In a deep skillet, heat oil over medium-high heat. Spoon the mixture onto a serving platter and cover with foil to keep warm.

Heat foil wrapped tortillas in a 350 degree oven for about 10 minutes.

Grill chicken breasts on a gas grill for about 7 minutes each side, until juices run clear. Remove from grill and let stand for 3 minutes, then slice crosswise into thin strips. Add to serving platter with vegetable mixture.

To serve, remove the tortillas from the oven. Top the middle of each tortilla with chicken strips, pepper mixture and desired toppings. Fold the bottom of the tortilla to cover part of the filling, then fold in the sides.

Enjoy!

Blessings,

Lisa

Menu Plan Monday, May 25, 2009

Happy Memorial Day in the U.S.! Thank you to all of our service men and women for their sacrafices to keep America and Americans safe and secure.
Last week's menu included some new recipes. The Roast Beef Au Jus in the Crockpot was fantastic. I switched up a few things because we had Spiced Pork Chops instead of Grilled Pork Chops and Pizza Cheeseburgers instead of Cheeseburgers. Both were well received and yummy!
Here's this week's plan:
Sunday~ Grilled Kielbassi, Macaroni Salad and Tossed Salad at camp
Monday~Hot Dogs with Chili Sauce and Leftover Salads, Frosted Brownies
for dessert
Tuesday~Spaghetti with Meat Sauce, Garlic Toast and Tossed Salad
Wednesday~Chicken Fajitas and Salsa Rice
Thursday~Grilled Steak, Baked Potatoes, Grilled Vegetables
Friday~Pizza and Wing Night
Saturday~Graduation Party

Menu Plan Monday, March 3, 2008

March is here! That means Spring is on the way! HOORAY! I'm tired of the cold and snow.

Last week, we didn't get the BBQ Chicken Pasta made or the Wedding Soup on Saturday because we had errands to run. (see We did it! ) Hockey season is officially over, so our evenings will once again be ours until a tournament later this month. Here's this week's plan:

Sunday~Crockpot Roast Chicken (see below), Mashed Potatoes with Gravy, Steamed Corn

Monday~BBQ Beef Fajitas, Seasoned Rice and Baked Beans

Tuesday~ Chicken Shephard's Pie (using the leftover chicken from Sunday) and Salad

Wednesday~ Slow Cooker Pot Roast with potatoes and carrots

Thursday~ Spaghetti and Meatballs, Salad

Friday~ Fish Fry from Church

Saturday~Italian Wedding Soup

I made the Crock Pot Roast Chicken today for dinner. It was delicious! I rinsed out a whole chicken, stuffed the cavity with one small onion, quartered and 3 cloves of smashed garlic. Then I rubbed ground sage, a wee bit of salt, paprika, garlic powder and Mrs. Dash garlic and herb seasoning on the outside of the bird. I placed 3 aluminum foil balls on the bottom of the crockpot and poured in a can of low sodium chicken broth over them, then placed the chicken on top. I cooked it on high for 2 hours and low for 5 hours. It was fall off the bone tender and very flavorful. The juices in the bottom of the crockpot made wonderful gravy. I just poured it into a pan and added a slurry of flour and water, brought it to a boil and let it simmer, stirring often, for about 10 minutes. It was yummy!

Have a wonderful week! Be sure to check out more great menus at Orgjunkie

Blessings,
Lisa

Menu Plan Monday, January 21, 2008

Last week, I made Slow Cooker Pork Chops instead of Steak and Baked Potatoes. The chops were dry. I don't know if it was the pork or the recipe. I'm thinking a bit of both. I'll probably try them again with a different chop. On Saturday, we had Family Game Night and ate too much of some great food. I'll post recipes today for the items I made.

Here's the plan for this week:

Sunday~ Cajun Chicken Pasta, French Bread, and Salad

Monday~3 Cheese Ravioli with Slow Cooker Meat Sauce, Garlic Toast, Roasted Veggies

Tuesday~Soup and Sandwiches~The guys are going out for pizza with the hockey team, so the girls will have soup and sandwiches

Wednesday~Slow Cooker Steak with Gravy, Onions, Mushrooms and Green Pepper over Rice

Thursday~Chicken Fajitas, Mexican Rice, and Beans

Friday~ Pizza, Breaded Wings, Salad

Saturday~Date Night for DH and me

Have a wonderful week!
