Menu Plan Monday 8.23.10
Welcome to another Menu Plan Monday, hosted by Laura at I'm An Organizing Junkie. A new school year begins tomorrow for me, so this week's menu will be simple and easy for me. These first few weeks back in school are exhausting for us all, along with painting, drywalling, insulating, packing and moving over the next few weeks, it will be extra exhausting this year. I just can't wait to be settled. I'm hoping for that to happen by November....I may have everything unpacked by then. ;0) Here's the plan for this week:

Menu Plan Monday 8.9.10
Welcome to another Menu Plan Monday hosted by Laura at I'm An Organizing Junkie. We did a very poor job of following a menu last week. Our foundation was finally installed, so we had spent the day there watching it. We went to dh's work picnic on Friday night, so I didn't cook then either. Life is happening and the cooking is falling to the wayside. I must admit that cooking in a tiny apartment kitchen, with a tiny apartment size stove, just isn't as enjoyable for me. The stove doesn't cook correctly and things burn (despite constant checking!) in seconds. This too shall pass, soon! Here's the plan for this week:
Sunday~Dinner at mom's.....Homemade Spaghetti Sauce over spaghetti, homemade meatballs, hot sausage, salad from the garden and cheesy garlic bread.
Monday~Slow Cooker Ham, Parsleyed Potatoes and Green Beans
Tuesday~Sloppy Joes with Macaroni and Cheese
Wednesday~ House Setting Day! Chicken Fajitas with Salsa Rice
Thursday~BLT's with Chips and Fresh Fruit

Chicken Fajitas and Salsa Rice
Chicken Fajitas
About 30 minutes before grilling chicken, in a deep skillet, heat olive oil over medium-high heat. Add the onions and cook for about 3 minutes, until softened, stirring often. Add the bell pepper and stir fry for 2 minutes. Reduce the heat to medium-low, sprinkle with 1/2 teaspoon of salt, cover and cook for 4 to 5 minutes, stirring once, until the peppers are crisp tender.
Here is our plate filled with the grilled chicken, which has been sliced cross-wise into strips, peppers and onions. I serve fajitas on tortillas with sour cream, cheese, and lettuce as toppings.
As a side, I made Salsa Rice. You can find the recipe here. It is so easy and so good too! I used Chi Chi's Fiesta Salsa in Medium.
Here's the recipe for the Fajitas:
Marinade~
3 Tablespoons fresh lime juice
2 Tablespoons olive oil
1 teaspoon minced fresh garlic
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano leaves, crumbled
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Fajitas~
4 boneless, skinless chicken breasts
1 small onion
1 large green bell pepper
2 Tablespoons olive oil
1/2 teaspoon salt
8 flour tortillas, stacked and wrapped in foil
Toppings~cheese, guacamole, lettuce, sour cream
Make the marinade: In a zipper-type food storage bag, mix the lime juice, oil, garlic, cuming, oregano, salt and pepper. Add the chicken, seal the bag and turn until chicken is coated. Let marinate for 30 minutes at room temperature or for up to 8 hours in the refrigerator.
Meanwhile, slice a small onion and cut one large bell pepper into thin strips. In a deep skillet, heat oil over medium-high heat. Add the onions and cook for about 3 minutes, until softened, stirring often. Add the bell pepper and stir fry for 2 minutes. Reduce the heat to medium-low, sprinkle with 1/2 teaspoon of salt, cover and cook for 4 to 5 minutes, stirring once, until the peppers are crisp tender. Spoon the mixture onto a serving platter and cover with foil to keep warm.
Heat foil wrapped tortillas in a 350 degree oven for about 10 minutes.
Grill chicken breasts on a gas grill for about 7 minutes each side, until juices run clear. Remove from grill and let stand for 3 minutes, then slice crosswise into thin strips. Add to serving platter with vegetable mixture.
To serve, remove the tortillas from the oven. Top the middle of each tortilla with chicken strips, pepper mixture and desired toppings. Fold the bottom of the tortilla to cover part of the filling, then fold in the sides.

March is here! That means Spring is on the way! HOORAY! I'm tired of the cold and snow.
Last week, we didn't get the BBQ Chicken Pasta made or the Wedding Soup on Saturday because we had errands to run. (see We did it! ) Hockey season is officially over, so our evenings will once again be ours until a tournament later this month. Here's this week's plan:
Sunday~Crockpot Roast Chicken (see below), Mashed Potatoes with Gravy, Steamed Corn
Monday~BBQ Beef Fajitas, Seasoned Rice and Baked Beans
Tuesday~ Chicken Shephard's Pie (using the leftover chicken from Sunday) and Salad
Wednesday~ Slow Cooker Pot Roast with potatoes and carrots
Thursday~ Spaghetti and Meatballs, Salad
Friday~ Fish Fry from Church
Saturday~Italian Wedding Soup
I made the Crock Pot Roast Chicken today for dinner. It was delicious! I rinsed out a whole chicken, stuffed the cavity with one small onion, quartered and 3 cloves of smashed garlic. Then I rubbed ground sage, a wee bit of salt, paprika, garlic powder and Mrs. Dash garlic and herb seasoning on the outside of the bird. I placed 3 aluminum foil balls on the bottom of the crockpot and poured in a can of low sodium chicken broth over them, then placed the chicken on top. I cooked it on high for 2 hours and low for 5 hours. It was fall off the bone tender and very flavorful. The juices in the bottom of the crockpot made wonderful gravy. I just poured it into a pan and added a slurry of flour and water, brought it to a boil and let it simmer, stirring often, for about 10 minutes. It was yummy!
