Welcome to another Menu Plan Monday, hosted by Laura at I'm An Organizing Junkie. This week doesn't look to be too busy until the weekend. I managed to cook at home every day last week, except for Friday. It was dance night and we ordered pizza. Here's the plan for this week:

Peaches and Cream No-Bake Cheesecake



Peaches and Cream No-Bake Cheesecake

2 cups Graham Cracker Crumbs

6 Tbsp. margarine, melted

1 cup sugar, divided

4 pkg. (8 oz. each) Neufchatel Cheese, softened

1 pkg. (3 oz.) Peach Flavor Gelatin

2 fresh peaches, chopped

1 tub (8 oz.) Whipped Topping, thawed

Mix graham crumbs, margarine and 1/4 cup of the sugar; press onto bottom of 13x9-inch pan. Refrigerate while preparing filling.

Beat Neufchatel and remaining 3/4 cup sugar in large bowl with electric mixer until well blended. Add dry gelatin mix; mix well. Stir in peaches and whipped topping. Spoon over crust; cover.

Refrigerate 4 hours or until firm. Store leftovers in refrigerator.

Menu Plan Monday, April 12, 2010


Welcome to another Menu Plan Monday hosted by Laura at I'm An Organizing Junkie. This week should be filled with homecooking. As much as I tried last week, it just didn't happen. We were so busy with home building and selling activities, a hockey banquet, religious ed, dance and other obligations that I didn't cook very much. I'm thankful for a relaxing weekend and that I was able to cook for the family on Saturday and Sunday.
Here's our plan for this week:

We went walking...

Easter 2010

We had a lovely day. We attended Mass, came home to prepare for dinner with my family and had an egg hunt. Then we relaxed for a bit before heading to dh's parents for a visit. It was a busy day! Hope your day was great too!

Just sharing...

Friday was our student teacher's last day with our class. I always try to give my student teacher a gift that is a keepsake, whether it's a scrapbook, tote personalized with the student's handprints, or a slideshow. This year I made a collage using Smilebox, matted and framed it. I had my students sign their names on the mat to make it more personal. Miss Miller loved it! I had it in a bag with a few teacher supplies, as well.

Hockey Banquet

On Monday evening we attended the Hockey Booster's Annual Banquet. It was a nice event, with great food.

Our Freshman team are the Laurel Hockey League's 09-10 Champions with a 13-1 season record. The boys, in grades 5-9, really came together as a team through the season and did a great job. DS is second from the right in the second row. They were each given a small trophy and a championship t-shirt.

DS is posing with the Championship Trophy. He was so proud!

We gathered the coffee mugs and used the PAAS Traditional Egg Coloring Kit last Saturday to color our dozen of eggs.

Monday Musings and a Menu Plan, too!



It's Monday. It's the start of another week, which seems to just be blending into the previous week. It was a busy holiday weekend and I'm sorely missing a longer Easter break this morning. I love having Monday after Easter off, to recoup. We have school today, then it's off to another appointment with our builder, then to a hockey banquet for ds. I'm hoping to get home before nine. Tomorrow will be more of the same and so will Wednesday. Here's hoping that nothing comes up on Thursday. Friday is another busy day. I am hoping to cook for the family amidst the chaos of life. It's so important to take that time and sit down as a family. We eat, laugh, and talk about our days. Here's what's planned for our dinners this week:

Easter Prayer


I received this beautiful prayer in my inbox from Holley Gerth at Heart to Heart with Holley:

LORD,

Thank You for the gift of HOPE
You gave us on Easter morning.
Because of You we know
That no problem is too difficult
And even death does not have power over us.


Thank You for the gift of JOY
You gave us when You were resurrected.
Because of you we know
That no matter how challenging life may be,
In the end we will rejoice again.



Thank you for the gift of LOVE
You gave us when You laid down Your life.
Because of You we know
That there is no sin too great to separate us

Easter Dinner Menu


We are hosting Easter dinner tomorrow. I am baking and prepping today so that I can enjoy the time with family tomorrow. I will be making the Italian Easter bread today, dying eggs with the kids, setting the tables and getting the gifts ready for everyone.

Here's our menu:

Baked Ham
(I score my ham, then stud it with whole cloves. I pour 7-up over it for a glaze.)
Kielbassi
Mashed Potatoes and Gravy
Pickled Eggs and Beets
Green Bean Casserole
Italian Easter Bread
