Menu Plan Monday, September 7, 2009


Happy Labor Day!
It's time for another Menu Plan Monday. I have survived the first week of first grade. lol My class is filled with nice kids who are eager to learn. I'm blessed to have them in my room this year! I'm still exhausted at the end of the day, but know it will get better as the year goes on. The start of school is always tiring for me. DD loves preschool and DS has settled right back into the groove of the school year.


I highly recommend the Chicken Taco Pizza that I had on last week's menu. The entire family loved it, including a picky 4 yo and a somewhat picky 10 yo. I subbed grilled chicken breast that had been seasoned with taco seasoning for the rotisserie chicken and it just added another layer of flavor with less fat. It was easy too!


Here's my somewhat ambitious plan for this week:


Sunday~ Spaghetti with Veal Parmesan and Tossed Salad



Monday~Labor Day~eat at the fair



Tuesday~Country Fried Steak, Mashed Potatoes and Gravy, Green Beans



Wednesday~Anniversary Chicken, Rice Pilaf and Steamed Snow Peas



Thrusday~Beef Patties and Gravy, Parsley Potatoes and Corn



Friday~Pizza and Wing Night



Saturday~Romantic Getaway for 2....dmil is staying with the kids.

Sounds like a great plan, Lisa! I did not get one done for this week because the holiday gets me totally confused over what day it is. Sad, I know!!

Thanks for the visit to my blog and the kind comment. To answer about the enchilada stuffed manicotti, I fill homemade manicotti (sort of like crepes) with:

1 lb. hamburger, browned with some chopped onion and a minced garlic clove

refried beans
shredded cheddar cheese

Place the stuffed manicotti in a baking pan and cover with enchilada sauce and a bit more shredded cheese. Bake in oven (350) for about 25 minutes or until all is hot and bubbly and cheese is melted nicely. (cover the pan for the first 15 minutes)
