Carrot Cake with Cream Cheese Frosting


Birthday wishes go out to my dear husband! Today is his special day! Above is his photo with his birthday cake. I made him a Carrot Cake with Cream Cheese Frosting. Here are the recipes:
Carrot Cake
2 cups all-purpose flour
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
3 cups finely shredded carrot
1 cup cooking oil
4 eggs
Oven 350 degrees
In a bowl, combine flour, sugar, baking powder, baking soda and cinnamon. Add carrot, oil, and eggs. Beat with an electric mixer until combined.
Pour into 2 greased and floured 9-inch round baking pans. Bake in a 350 degree oven for 30-35 minutes until a toothpick inserted in the center comes out clean. Cool on wire racks for 10 minutes. Rmove cakes from pans. Cool thoroughly on racks. Makes 12-15 servings.
Cream Cheese Frosting
6 ounces of cream cheese
1/2 cup softened butter
2 teaspoons vanilla
4 1/2 to 4 3/4 cups sifted powdered sugar
In a bowl, beat together cream cheese, butter and vanilla until light and fluffy. Gradually add 2 cups powdered sugar, beating well.
Gradually beat in enough remaining powdered sugar to make frosting of spreadin consistency. Frosts tops and sides of 2 9 inch cake layers. Cover cake; store in refrigerator.

Happy (very late!) birthday to your hubby! The cake sounds great. I love cream cheese frosting and could just eat that by itself, but I try to be civilized and QUICKLY get it onto the cake when I make it! LOL!
