Menu Plan Monday, January 21, 2008



Last week, I made Slow Cooker Pork Chops instead of Steak and Baked Potatoes. The chops were dry. I don't know if it was the pork or the recipe. I'm thinking a bit of both. I'll probably try them again with a different chop. On Saturday, we had Family Game Night and ate too much of some great food. I'll post recipes today for the items I made.


Here's the plan for this week:


Sunday~ Cajun Chicken Pasta, French Bread, and Salad



Monday~3 Cheese Ravioli with Slow Cooker Meat Sauce, Garlic Toast, Roasted Veggies


Tuesday~Soup and Sandwiches~The guys are going out for pizza with the hockey team, so the girls will have soup and sandwiches


Wednesday~Slow Cooker Steak with Gravy, Onions, Mushrooms and Green Pepper over Rice



Thursday~Chicken Fajitas, Mexican Rice, and Beans


Friday~ Pizza, Breaded Wings, Salad


Saturday~Date Night for DH and me

Pork Chops for the Slow Cooker

I found this recipe on recipezaar and decided to try it for tonight. I'll post a picture this evening!

Pork Chops for the Slow Cooker
6 boneless pork chops
1/4 cup brown sugar
1 teaspoon ground ginger
1/2 cup soy sauce
1/4 cup ketchup
2 garlic cloves, Crushed
salt & pepper (I didn't use the salt. The soy sauce has enough sodium.)

Place pork chops in slow cooker. Combine remaining ingredients and pour over pork chops.
Cook on Low setting for 6 hours, until internal temperature of pork has reached 160 degrees F.

Monday~ Chicken Cordon Bleu, Parsley Potatoes, French Style Green Beans
Tuesday~Wedding Soup and Grilled Cheese Sandwiches (carry over meal)
Wednesday~Hockey Night...pick up something on the way to practice
Thursday~Steak, Baked Potatoes, Glazed Baby Carrots
Friday~Pizza and Wing Night
Saturday~Family Game Night~ Appetizer Buffet I will post the recipes later this week!

Tasty Thursday: January 10, 2008




Angel Lush




Angel Lush is one of my favorite light desserts to serve to family and friends. It's especially refreshing in the spring and summer months. I first found the recipe in Kraft's Food and Family magazine, but I now see it's rated in the top 10 Healthy Living recipes on their website.


Angel Lush

1can (20 oz.) crushed pineapple in juice, undrained
1 pkg. (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
1 cup thawed COOL WHIP LITE or COOL WHIP Sugar Free Whipped Topping
1 pkg. (10 oz.) round angel food cake
10 fresh strawberries

MIX pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping.

CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with one-third of the pudding mixture. Repeat layers two times.

REFRIGERATE at least 1 hour. Top with berries just before serving. Store leftovers in refrigerator.

Our Home Mission Statement

As part of the Small Things at Home Sanctuary, the Company Girls are creating home mission statements. Here's what I've come up with:


"Our goal is for our home to be warm and inviting for our family and friends. It will be a place of love and acceptance, a refuge from the storms of the world, a sanctuary for all who enter. Our home will be clean, organized and free from clutter through good habits and daily routines. "


Thank you to the Company Girls for their inspiration! It's hard to put into words what I want my home to be to our family and friends.
