Tempt My Tummy Tuesday~August 3, 2010

Since my parents and in-laws have bumper crops of zucchini, I decided to make some Pineapple Zucchini Bread today. This recipe is a favorite and makes two loafs...one to eat and one to give away!
Pineapple Zucchini Bread

4 eggs
1 1/2 cups white sugar
2 teaspoons vanilla extract
1 cup vegetable oil
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 (8 ounce) can crushed pineapple, drained
2 cups grated zucchini
3 cups all-purpose flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder


Combine flour, baking powder, baking soda, and salt.

In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon, and nutmeg. Blend in pineapple and zucchini. Stir flour mixture into zucchini mixture. Pour batter into two greased and floured 9 x 5 inch loaf pans.

Bake at 350 degrees F (175 degrees C) for 1 hour. Cool on wire racks.

Tempt My Tummy Tuesday~July 27th





I am taking part in Tempt my Tummy Tuesdays hosted by Lisa at Blessed With Grace. Be sure to visit there for more taste tempting recipes! I saw this recipe on Paula Deen's show and just had to try them. So yummy and perfect exactly as they are...no tweeking necessary.

Sweet Potato Chili Cakes with Cilantro Lime Sauce

4 cups peeled and grated sweet potatoes
1/2 jalapeno pepper, seeded and diced
3/4 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon kosher salt
1/2 teaspoon chipotle chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/4 cup whole milk
1 large egg, lightly beaten
Olive oil for frying
Cilantro Lime Cream Sauce, recipe follows
Chopped fresh cilantro leaves, for garnish
Directions
In a large bowl, combine the sweet potatoes, jalapeno, flour, baking powder, salt, chili powder, cumin, and black pepper.

In a small bowl lightly beat the milk and egg until well mixed. Add to the sweet potato mixture, stirring, until all the ingredients are well combined.

Heat a large skillet over medium heat and add enough vegetable oil to cover bottom of skillet. Drop the sweet potato mixture, by rounded teaspoonfuls, into the hot oil. Press lightly to flatten the mixture to the size of a half dollar. Cook until the cakes are golden brown, about 1 to 2 minutes on each side. Transfer the cakes to a serving platter. Top each cake with a small amount of Cilantro Lime Cream Sauce and garnish with fresh cilantro.

Cilantro Lime Cream Sauce:
1 (8-ounce) container sour cream
1/2 cup minced fresh cilantro leaves
1 lime, zested and juiced
Pinch salt
In a small bowl, combine the sour cream, cilantro, lime zest, lime juice and a pinch of salt. Cover and refrigerate until ready to serve.

Tempt My Tummy Tuesday~BLT's

This is my first week taking part in Tempt my Tummy Tuesdays hosted by Lisa at Blessed With Grace. Be sure to visit there for more taste tempting recipes! Nothing says summer to me, more than BLT's for a cool dinner. Here's a recipe that I just tried from Semi-Homemade magazine. I love that there is bacon in the mayo too!

Grandma Dicie's Double-Decker BLTs

1/3 cup mayonnaise

2 Tablesppons, chopped, cooked Bacon

1 Tablespoon lemon juice

1 Tablespoon chopped fresh parsley

1/2 teaspoon sea salt

1/4 teaspoon ground black pepper

12 white bread slices toasted

1 cup mixed greens

2 tomatoes, sliced

1 (2.1oz) box fully cooked bacon

1. In a small bowl, stire together mayonnaise, chopped bacon, lemon juice, parsley, salt and pepper.

2. Spread one side of 8 bread slices with mayonnaise mixture. Layer 4 bread slice, mayonnaise mixtures sides up, with half of mixed green, half of tomato slice, and 4 bacon slices. Top with 4 bread slices, mayonnaise mixture sides up; layer with remaining mixed greens, tomato and baon. Top with remaining 4 bread slices. Secure with wooden picks, if desired.
