We had a great weekend getaway at our camp. We had nice visits with family, great food and lots of relaxation time. We enjoyed the new experience of the larger camper and deck. It was so nice to actually sleep on a bed, not a table made into a bed. The kids love their bunk beds too. The deck was built level with the camper, so it seems like we are in a tree house when we sit on it. The view of the tree tops, squirrels jumping from tree to tree and the surrounding mountains is beautiful. We didn't make it onto the lake, because the boat is in need of repair. I was actually having boat envy by the time Monday rolled around....I wanted to be on the lake too! We're hoping that it will be ready for this weekend. If not, I have plenty of landscaping and planting to do on our site to take up my time. We did take the kids to one of the playgrounds surrounding the lake and got to dip our feet into the freezing water on Monday.

I'm so ready for summer vacation to start!

Menu Plan Monday, May 12, 2008


Hello everyone! We did try the Sour Cream Pork Chops and they were okay. They were very tender, but dh said that the sauce wasn't as smooth as he likes. I'll probably try them again with a different sour cream brand and see if that helps with the "bite" the dish had.

Here's the plan for this week:

Sunday~ Happy Mother's Day! DH made brunch and we had dinner at my mil's.
Monday~BBQ Italian Chicken Breasts, Garlic Smashed Potatoes, Green Beans
Tuesday~Sloppy Joes, French Fries, and Corn
Wednesday~DH's Annual Banquet
Thursday~Grilled Steaks, Baked Potatoes and Salad (We didn't have it last week.)
Friday~Pizza and Wing Night
Saturday~Grilled Hot Dogs, Potato Salad and Fresh Fruit

Recipe: Sour Cream Pork Chops

This is a recipe from Cooking With Paula Deen magazine. It is in the current issue on page 66. I'll post how we liked it later this week.

Sour Cream Pork Chops

2 T. vegetable oil
4 (1-inch thick)boneless pork chops
1 1/2 cups sliced onion, separated into rings
1 (8 ounce) can of mushrooms, drained
1 cup beef broth ( I will use low sodium)
1 T. chopped parsley
1 tsp. paprika
1 tsp. prepared mustard
1/2 tsp. salt
1/2 tsp. ground black pepper
1 cup sour cream
Hot Cooked Rice
Garnish: chopped fresh parsley

In a large skillet, heat oil over medium-high heat. Add pork chops, and cook for 2 minutes per side, or until browned. Place onion evenly over pork chops. Spread mushrooms over onion.

In a small bowl, combine broth, parsley, paprika, mustard, salt and pepper. Pour broth mixture over pork chops. Cover, reduce heat to medium-low and simmer for 1 1/2 hours. Stir in sour cream, and cook for 3 to 4 minutes. Do not boil. Serve over hot rice. Garnish with parsley, if desired.

Recipe: Barbecue Chicken Burritos

I found this recipe in a Taste of Home Magazine given out at their Cooking School. It is delicious!

Barbecue Chicken Burritos

/2 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1-1/2 cups julienned green peppers
1 cup chopped onion
4 tablespoons vegetable oil, divided
1/2 cup barbecue sauce
1-1/2 cups (6 ounces) shredded Mexican cheese blend
4 flour tortillas (10 inches), warmed
Lime wedges, sour cream, shredded lettuce and chopped tomatoes, optional

Directions: In a large skillet, cook the chicken, green peppers and onion in 2 tablespoons oil over medium heat for 6-8 minutes or until chicken juices run clear. Stir in barbecue sauce. Bring to a boil. Reduce heat; simmer for 1-2 minutes or until heated through. Sprinkle cheese down the center of each tortilla; top with chicken mixture. Fold sides and ends over filling and roll up. In a large skillet, brown burritos in remaining oil on all sides over medium heat. Serve with lime wedges, sour cream, lettuce and tomatoes if desired. Yield: 4 servings.
