Ham Pot Pie


Ham Pot Pie is one of my favorite comfort foods. My mother got the recipe from her mother, and now I make it for my family. Here's the recipe:

Ham Pot Pie

Simmer cubed ham (about 2 lbs.) in water with chopped onion and about 4 cubed potatoes for 2-3 hours. Bring to a boil and add dough. Cook for 1-1 1/2 hours.

Dough:

2 cups flour

1/2 tsp. salt

2 tsp. baking powder

2 tsp. Crisco shortening

3/4 cup of broth (from pot)

Mix, roll out on flour sprinkled board with rolling pin. Cut into squares. Add to boiling broth.

Crockpot Wednesday, September 23, 2009


It's Crock Pot Wednesday over at Dining with Debbie! Debbie invited me to join the crock pot recipe sharing at her blog, so I thought I'd share one of my favorite crock pot recipes: Slow Cooker Spaghetti Sauce.



Slow Cooker Spaghetti Sauce
1 pound ground beef
1 medium onion, chopped
1 can(28 oz.) crushed tomatoes (I use Furman's)
1 can (8 oz.) tomato sauce
1 can (6 oz.) tomato paste
1 bay leaf
1 tablespoon brown sugar
4 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon dried thyme
In a skillet, cook ground beef and onion over medium heat until meat is no longer pink; drain. Transfer to a slow-cooker. Add the next 10 ingredients. Cover and cook on low for 7-8 hours, or until heated through. Discard bay leaf. Serve over your favorite pasta. This sauce also freezes well.

Saturday Summary

It's been a while since I've posted. Back to school is getting the better of me and we've been on the go so much that I'm too tired to put much thought into a post. (Don't expect this post to be fabulous! lol) Last weekend we visited the Ohiopyle area in Fayette County for a couple getaway. We stayed in the adorable little cottage below for the night.

We did a lot of exploring in two days. We visited the Youghiogheny River area in the town of Ohiopyle. It was amazing.

We visited Fallingwater and Kentuck Knob, both homes designed by Frank Lloyd Wright.

We had a great time, ate some good food and enjoyed each other's company. On the bookends of our weekend, ds was sick with an ear infection, religious ed classes started, dd started dance classes, we shopped for new living room furniture and my uncle is visiting from Arizona. Otherwise, I've just been busy with the happenings of life....school, work, laundry, cleaning and errands. Hope all is well in your little corner of the world!

Menu Plan Monday, September 7, 2009


Happy Labor Day!
It's time for another Menu Plan Monday. I have survived the first week of first grade. lol My class is filled with nice kids who are eager to learn. I'm blessed to have them in my room this year! I'm still exhausted at the end of the day, but know it will get better as the year goes on. The start of school is always tiring for me. DD loves preschool and DS has settled right back into the groove of the school year.


I highly recommend the Chicken Taco Pizza that I had on last week's menu. The entire family loved it, including a picky 4 yo and a somewhat picky 10 yo. I subbed grilled chicken breast that had been seasoned with taco seasoning for the rotisserie chicken and it just added another layer of flavor with less fat. It was easy too!

Tuesday~Country Fried Steak, Mashed Potatoes and Gravy, Green Beans

Friday~Pizza and Wing Night



Saturday~Romantic Getaway for 2....dmil is staying with the kids.
