Stuffed Peppers Casserole


Tonight for dinner, I made this Stuffed Peppers Casserole. I used the recipe from Robbie's Recipe Collection as the basis for my casserole. Of course I added some things and changed others. It's just my nature as a cook. ;0) We really enjoyed this casserole served with mashed potatoes. DH requested that I use less green peppers next time because he isn't a fan of cooked green peppers.
Here's the recipe, with my additions in italics.
Ingredients:
Serves : 4 Prep. Time : 1:15
1 Lb. ground beef OR turkey
2 Tbls. chopped onion
1/3 cup chopped green bell pepper
1 cup cooked rice
1 tsp. salt
1/8 tsp. garlic salt (1/4 tsp. garlic powder instead)
1 Tbsp. Worchestershire Sauce
1/4 tsp. dried basil
Fresh Ground Black Pepper
(2) 8 oz. cans tomato sauce (I used 1 15 oz. can Contadina Zesty Tomato Sauce)
3 med. green bell peppers - seeded, sliced lengthwise
1/2 cup shredded mozzarella cheese (I used 1/2 cup cheddar cheese and added it to the meat mixture with the rice , then topped it with 1/2 cup of cheddar during the last 5 minutes.)
Directions:
-Brown meat, onion, and chopped peppers in skillet, stirring occasionally.
-Drain off fat.
-Stir in rice, salt, garlic salt, worchestershire sauce, basil and 1 can of tomato sauce( or 1/2 can of zesty tomato sauce)and 1/2 cup cheddar cheese; heat through.
-Spray a 9" X 9" X 3" baking pan with cooking spray and line with 1/2 the sliced peppers.
-Pour half of meat mixture over peppers.
-Layer remaining sliced peppers on top of meat mixture.
-Pour remaining meat mixture on top.
-Pour remaining tomato sauce over meat mixture.
-Cover with foil and bake in a 350 degree oven for 45 minutes.
-Uncover and bake an additional 10 minutes.-Sprinkle with cheddar cheese and bake an additional 5 minutes.

Menu Plan Monday, September 22, 2008


Good Afternoon! I'm excited about the Family Favorites Edition. Several of our favorites will be on this week's menu. Be sure to check out the link for the Saucy Baked Pork Chops. It's a new favorite of ours. I'm looking forward to checking out everyone's favorites!
Things are finally coming together at school. Each day gets a bit less overwhelming. Prayer has helped a lot. I'm currently reading Lisa Whelchel's book The Busy Mom's Guide to Prayer and it has really focused my daily prayer time along with the Rosary. It's not a Catholic publication, but is very inspiring and targets the areas of a woman's life. I especially enjoy the prayers for my spouse and children.
My dieting and lower sodium diet is helping my high blood pressure. I had my six month follow-up today. My bp is in the low normal range. Hooray!

Menu Plan Monday, September 15, 2008

It's been a busy two weeks since school began. I just haven't had the time or energy to post my menus. I'm still writing them out at home, just not posting.

The start of school is always tiring for me. It's emotionally and physically draining working with first graders at this time of year. It takes time getting them into the routine of first grade. They are "testing"the waters and each day is challenging.

Our daughter is not adjusting well to being at day care this year. She's been going there since she was an infant, but is really having a hard time adjusting to not being home with me. I worry about her all day, which adds to my emotional overload.

Thankfully, our son loves fourth grade and his teachers. He is having a great year so far. Hockey practice started for the season and he's very excited about it. I'm so glad!

As always, my husband is supportive, loving and patient with me. I am so blessed to have him in my life and as my partner on this journey.

Good evening! Where has the summer gone? School starts tomorrow for the kids and I'm planning an easy menu while we all get back into the groove of school and a "new" routine. We had a busy weekend camping, swimming and working and attending the county fair.
